Ingredients

3 large zucchinis, grated

2 carrots, grated

3 eggs

1 cup of cheddar cheese, grated

1 onion, diced

1 cup self-raising flour

Just under
half a cup of vegetable oil

Salt and pepper

Optional (but you know you want to): 4 rashers bacon, diced and cooked

Serves: 6

 

When people eat something you make and exclaim something akin to, “I can’t believe it tastes so good,” it’s hard not to wonder if they doubted you to begin with. But looking at these ingredients, I can understand why. The skill involved in making this meal is on a par with Vegemite toast – but I wanted to share it because it’s fantastic to take on trips, to picnics, or to eat alone at home in front of the TV all at once. It can be served hot or cold; and (as always) tastes even better with bacon stirred through. I dare you to not like it.

 

Method

In a large mixing bowl, combine all ingredients.

 

Transfer to a lightly oiled and pre-heated camp oven.

 

With the lid ajar, bake on moderately heated coals for 20 minutes or until egg is cooked through.

 

Remove lid entirely for the last five minutes.

 

Serve hot or cold with salad or vegetables.
