The one thing I never leave home without is a roll of foil.

If you have no other cooking equipment in your vehicle,

foil can be used to cook just about anything.

Method

In this recipe I have made individual foil bowls to cook up breakfast on the hot plate over the fire.

You can use individual foil pie plates or even enamel or stainless steel dessert bowls to cook in instead.

To make the foil bowls, just line a plastic camping plate with foil and scrunch the edges up to make the bowl shape secure. Remove the plastic bowl and you have a perfectly functional piece of equipment to cook your breakfast in.

Combine all ingredients except the eggs in a bowl and mix together. Evenly divide the mixture between 2-4 foil parcels, cover with extra foil and place on the hot plate.

Allow mixture to come to the boil for a few minutes, then make a little well in the middle with a spoon and crack in an egg. Cover with foil again and cook ’til the egg is to your liking.

Serve with toast and bacon or just on its own – it’s a delicious way to start the day.

Hints:

This breakfast can be made in a frypan on a stove top in summer if you can’t have a fire.

Not keen on aluminium foil bowls? You can place all ingredients into the fry pan and cover with a lid then make wells in the mixture to cook the eggs. Enjoy.

INGREDIENTS

1 can of crushed tomatoes

1 handful of sliced spinach

2 sliced spring onions

2 fresh tomatoes chopped

1 egg per parcel

Use salt and pepper to taste
